How to roast beets














Ingredients 
red beets
olive oil
salt

Preparation Method
Preheat the oven at 400 F.

Cut the beets' leaves off, including the stalk (I keep the leaves in a bag in the freezer for later use in soups / broths / stew, etc).
Then thoroughly wash the beets and place in a glass dish or oven tray.
Grease them well on all sides with oil and salt, then bake for 30 to 50 minutes.

After 30 minutes you can check whether they're baked by piercing with a sharp knife in the center of the largest beet, if it slips easily they're done.
Before you peel them let them cool.

Then use in salads as you prefer, one that I always do is with a little fresh squeezed lemon juice,olive oil, salt and black pepper.
