Greek yogurt lemon pie


















Ingredients
Dough
250 g flour
100 ml water
90 ml of oil
1 teaspoon baking powder
2 tablespoons brown sugar
1/3 teaspoon salt
Filling
300 g Greek yogurt
2 eggs
30 g semolina
60 g sugar
1 pinch salt
1
teaspoon lemon extract / lemon zest
For finishing
1 egg yolk
1 teaspoon milk

Preparation Method
Dough
Place all ingredients in a large bowl and mix until it forms an
elastic dough. Then put in plastic food wrap and put in the refrigerator while preparing the filling.
Filling
Beat the egg whites with salt.
Separately, mix the yolks with yogurt, semolina, salt, sugar,
extract / lemon zest. Then incorporate the egg whites with a spatula.

Divide dough into two equal pieces,
and flatten them in 2 sheets the size of pan you will use (I used round plate with a diameter of 9").

Grease pan and coat with flour, then place a sheet and spread filling on top of it evenly, then cover with the other sheet.

Beat the remaining yolk with the teaspoon of milk, then grease pie on top and put in the oven at 350F, for 30-45 minutes.

After removing the pie from the oven powder with  sugar, let cool and then you can slice it and serve.
