Grape cornmeal cake

Grape cornmeal cake

2 tablespoons of butter, melted

80 g flour
80 g cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
5 tablespoons sugar
1 to 2 tsp lemon zest / lemon extract
65 ml vegetable oil
6 tablespoons of buttermilk (or 4
tablespoons yogurt + 2 tablespoons milk)
2 tablespoons honey
300 g grapes w/o seeds,halved

Preparation Method
In a medium bowl mix the white flour, cornmeal, baking powder and salt.
Separately, in a large bowl beat the eggs with sugar, then add the lemon zest, the oil and the
melted butter and mix. Then incorporate the flour mixture, then the buttermilk, and finally mix in the honey, making sure not stir too much.

Pour batter into pan (9" x 9") greased with oil and dusted with flour. Then distribute over half the grapes on top of the dough and bake at 350F for 15-17min, until the composition is light gold. Remove from the oven and spread remaining grapes on top and continue to bake until the top is golden brown (about 20-25 minutes). Or you can put all grapes from the beginning and bake until done.
