Gluten-Free Jelly Donuts

Gluten-Free Donuts













Ingredients
Batter
3 eggs
½ cup apple sauce
½ cup grapeseed oil
½ cup agave syrup
1 tablespoon of your favorite extract (I used lemon)
½ cup coconut flour
½ teaspoon salt
¼ teaspoon baking soda
Filling
½ cup raspberry jam
1 tablespoon of starch (I used arrowroot)

Topping
ground wallnuts


Preparation Method
In a bowl mix the coconut flour, salt and baking soda.


In another bowl, mix the eggs with apple sauce, oil, agave and extract.
Then add the flour mixture and mix until smooth.

Let the
batter on the side while pre-heating the oven at 175C / 350F, grease with oil a muffins tray and prepare the filling.

Filling
Combine jam with the starch in a small bowl and mix well.

Place in every cup of the
muffins tray 2 heaping tablespoons of batter, then place 1 teaspoon of the jam mixture over it,

and then put 1 more tablespoon of batter over it to cover the jam mixture.

Sprinkle with the ground wallnuts onto top.
Bake for 20-25 min.

Remove them from the tray only after allowing them about 20 minutes to cool down.
