Carrot Muffins |

Ingredients
1 1/2 cup grated carrot
1/2 cup sugar (+ 2 Tbs sugar if you prefer desserts sweeter)
1 cup flour
1 egg
60 ml of oil
3 heaping tablespoons ground walnuts
1-2 teaspoon lemon extract
1 teaspoon cinnamon powder
1 teaspoon baking soda
salt
Preparation Method
Mix the grated carrot with 1/4 cup sugar and set aside.
In a bowl, mix flour, cinnamon, salt and baking soda.
In a large bowl, beat the egg and sugar until smooth.
Add the oil, extract, mix, then add the flour mixture, and finally, mix in the carrots and walnuts.
Place mixture into a muffins tray,
and bake for 25-35 minutes at 250F.
After they have cooled I decorated them with icing made of cream cheese mixed with a little sugar and a little lemon extract and natural orange color.
