Angel cake

Angel cake
Ingredients
6 egg whites at room temperature
110 g powdered sugar
160g cake flour

pinch of salt
40 g of water at room temperature
1/3 teaspoon tartar
1 teaspoon lemon / orange extract
Optional fruit sauce:
2 cups berries / strawberries / raspberries (fresh or frozen)
honey


Preparation
Sift the flour. Mix the egg whites with water, salt, a little tartar and the extract with mixer until 
thoroughly combine, then add the sugar bit by bit, mixing constantly. When the egg whites are well mixed, add sifted flour and mix gently with a spatula. Put in any pan you like (make sure not to put the composition for beyond half of the pan).
Bake at 350F for about 35 min.

Fruit Sauce
Place fruit in a saucepan over medium heat and cook for about 5 minutes, then add the honey and serve. If you do not put frozen fruit you should add some water to boil them.
