Mango and coconut soup

Mango and coconut soup













Ingredients
2 mangoes, peeled and diced
1 small onion, finely chopped
2 cloves garlic, crushed

ginger powder
1 tbsp coconut oil
200 ml coconut milk
500 ml water / vegetable broth
salt
pepper

Preparation Method
Cook the
onion and garlic in coconut butter, then add mango cubes, allow to cook for 1-2 minutes and finally add milk and broth / water.
Boil for 15-20 minutes, add salt, pepper to taste and then blend it (puree it).

If desired, strain the soup, because some strings from the mango may still remain (I didn't strain it, we don't mind). Finally put on the heat source again and bring the soup to a boil.
Serve with coconut flakes and croutons.
