About Quinoa and its preparation
What is quinoa?
Quinoa is a small round grain (a bit flat), of yellowish color.

Why should we include
quinoa in our diet?
The proteins found in quinoa are much easier to digest than those in meat. In addition, a very good source of calcium, and is more easily assimilated by the body than milk.
It contains more calcium than milk, helps strengthen bones and joints. The quinoa can be a good protective factor against arthritis, bone degradation, calcium malabsorption and other similar disorders.
Besides its unique protein quinoa also contains starch, sugars, oils (high in essential linoleic acid), fiber, minerals and vitamins. Quinoa grains are rich in vitamins A, C, D, E, K and B vitamins. Also, they're a good source of iron, calcium, chromium, copper, fluoride, iodine, magnesium, potassium, selenium, zinc. Due to its vitamins and minerals, quinoa boosts the immune system.
Quinoa is tasty and easy to digest. It is not sticky like most other grains, and has a delicious flavor of its own.
Quinoa can be used in salads, soups, food, pilaf (it's a good substitute for rice, for example), dessert, pudding, meatballs.

How to cook quinoa?
Here are three ways to properly cook quinoa
(w/ a common
preparatory step):

Before cooking quinoa, rinse it very well
. Quinoa
has a natural soapy coating that helps protects the seed from pests but there's no need to eat it, which has a slightly bitter taste. When it's packed quinoa is "prewashed", it's recommended, however, to be washed in a large and dense mesh strainer under strong jet of cold water for a few minutes.

Then drain it well and boil.

1. The most common method of cooking quinoa is boiling (it works much like rice).
Use two parts water to one part quinoa, for example 1 cup quinoa 2 cups water.

Simmer quinoa over medium heat for 15 minutes in water with salt, and cover,

until the liquid is absorbed by the seeds. After quinoa has cooked, remove from the heat source and leave covered for another 5 min. The steam will continue to cook quinoa.

2. Another way is to "toast" quinoa in oil to enhance its nutty flavor.
To toast quinoa put it in a hot pan with a little oil (1 tablespoon) and leave on medium heat stirring constantly so it does not stick, for 6-8 minutes until golden, then boil in hot water with salt.

3. Besides water, you can cook quinoa in vegetable broth or chicken broth (for those who are not vegetarians).
This way, it will further enhance your food's flavor. If you're cooking soup, then cook the quinoa in the same water as the vegetables or the chicken.
