Quinoa and vegetables balls
Ingredients
1/2 cup quinoa (washed well)
60 g feta cheese,
crumbled
1 red pepper, chopped
1 red onion, thinly sliced
1 handful of spinach, chopped
1 egg, beaten
black pepper, salt

Preparation Method
Preheat oven to 350F.
In a tray that has been previously oiled place onion and pepper, drizzle with oil, pinch salt and then bake until they become soft.


Meanwhile, place quinoa in a saucepan with 1 cup water and salt, cover and simmer for about 15 minutes (until there is no water left), afterwards remove from the heat source and leave covered for another 5 min. The steam will continue to cook the quinoa.

After you've cooked ​​the vegetables, chop them into small pieces or chop in a mini food processor (chop vegetables finely, do not puree them).
Once quinoa has cooled, place all ingredients in a large bowl, mix well, and form balls with your hands moistened with water. Then place them on a tray greased with oil and bake for 15-20 minutes.
