Dried fruit and nut cake

180 g almond flour
½ teaspoon of salt
½ teaspoon baking soda
6-7 dates, chopped
70 g raisins
70 g cranberries / dried cherries
100 g walnuts, chopped
4 eggs
2 tablespoons coconut oil
1 tablespoon coconut sugar / brown sugar
1 tablespoon vanilla extract
1 tablespoon grated orange / lemon


In a large bowl, combine almond flour, salt and baking soda, then add dried fruit, nuts and mix gently.
In a medium bowl, mix the eggs with the oil, sugar, vanilla and citrus peel.
Then mix the wet ingredients into the dry ones and place in a mini loaf pan previously greased with oil.
Bake at 350F for 20-30 minutes.
