French spinach soup

French spinach soup

1 lb spinach (fresh or frozen)
1 onion, chopped
1 large tomato, diced
2 potatoes, diced
2 tablespoons butter
1l water / chicken broth / vegetable soup
1 cup sour cream
black pepper and salt

Melt the butter in a large saucepan on medium heat, add the onion and cook for 5 min.
Then add the tomato and potatoes, and water / broth,
bring to a boil and then reduce heat so the soup is at a simmer.
Add the spinach and let boil for another 5-8 min .
Take the soup off the heat source, blend it (puree it), add the sour cream and simmer for 5 minutes. Season to taste with salt and black pepper.

You can serve with croutons, parmesan, vinegar or lemon juice. I served it with croutons.
