Couscous with Zucchini
















Ingredients
10 ounces couscous
2 cups boiling water
2 tablespoons olive oil
2 tablespoons water 
3 cloves garlic, minced 
3 zucchini, diced
1 small onion, sliced 
salt
black-pepper
 
Directions
Add couscous to boiling water, remove from heat and cover. Let stand 8 minutes.
In a large saute pan heat olive oil and saute the onion and garlic, then add zucchini, water, salt and black-pepper.




  











Cook until tender, about 8 minutes. Add in the couscous, and stir everything on heat source for another minute or so.
