Zucchini bites



















Ingredients
5 eggs
120 g flour
110 g oil
1
½ teaspoons baking powder
120 g Parmesan cheese / cheese / cheese, grated
1 small onion, chopped
3 large zucchini (about 500 g)
1 large carrot (about 150 g)
1 teaspoon salt
black pepper

Preparation

Peel the Zucchini (leave some peel on them) and carrot, grate them and mix with the onion and 1 teaspoon salt and knead lightly, then leave it for 20 minutes to allow for the liquid to separate.
Meanwhile, separately, mix the eggs with oil, add flour, baking powder, and mix well until smooth.

Drain the vegetables and add in the egg mixture, also add the parmesan cheese / cheese, and mix well.

Place mixture in a tray (25 x 19 cm) greased with oil or lined with parchment paper, bake for 45 minutes at 180C/355F (until it looks well baked).
