Pumpkin Bread



















Ingredients
210 g flour
1 teaspoon salt
200 g sugar
1 teaspoon baking soda
300 g mashed pumpkin

60 ml olive oil
60 ml vegetable oil
2 eggs beaten
60 ml orange juice
cinnamon
nutmeg
75 g walnuts, chopped

Preparation

Take a pumpkin, cut in slices, put them in a tray and bake at 400F, for 40-50 minutes - until soft.
Then peel the pumpkin and purée it.
In a bowl mix the pumpkin puree, olive oil, vegetable oil, eggs and orange juice. Stir well and set aside.


 

 











In a large bowl mix the flour, sugar, salt, baking soda and the 2 spices, then add the above mixture,















and briefly mix.















Finally, add the chopped walnuts.
Then transfer in a tray,



















and bake for 50 minutes at 180C.
Towards the end, you can check from time to time if done by inserting a toothpick in the center. When you pull it back out if it comes out clean - it's done, remove from oven and set aside to cool.

When cool, remove from pan and slice.
