Lentil Sausage Soup














Ingredients
500 g green lentils (I used French)
2 tablespoons olive oil
2
yellow onions, finely chopped
1 large leek, chopped
4 cloves of garlic, chopped

1 tablespoon of salt
1 1/2 teaspoons freshly ground black pepper
1 tablespoon fresh thyme, chopped
1 teaspoon cumin

8 stalks of celery, chopped
4-6 carrots, diced
3 liters of chicken stock / water
3-4 tablespoons tomato paste
250-400 g smoked turkey sausage (I used kielbasa), cut in half lengthwise and then sliced
2 tablespoons dry red wine or red wine vinegar
parmesan at serving

Preparation

In a large bowl, cover the lentils with boiling water and allow to stand for 15 minutes and then drain the water.

In a large pot over medium heat, heat the olive oil and saute a little the onion, leeks, and garlic. Add then the celery and carrots and cook for another few minutes. Then put the chicken broth / water, tomato paste, salt, cumin, thyme, the drained lentils, put the lid on and cook until boiled. After boiling, add the turkey sausage,

I used Kielbasa - Polish sausage turkey
