Straciatella Soup










 

Ingredients
3 l vegetable broth / chicken / water
4 eggs
5-6 tablespoons Parmesan
4 tablespoons parsley, chopped
4 tablespoons freshly basil, chopped
4 tablespoons semolina
2 cups of spinach, sliced
salt and pepper
Preparation
In a large saucepan bring  broth/water to a boil over moderate heat. In a bowl beat together the eggs, semolina, cheese, parsley, basil, then add in the broth, stirring gently with a fork to form thin threads of egg, about 1 minute. Let boil for 4-6 min. Finally add the spinach, season with salt and pepper and let boil for 2-4 min.
