Almond Cakes with Grapes
















Ingredients
1 1/2 tablespoons of coniac
1 cup seedless red grapes, halved (I used green)
3/4 almond flour
3-5 tablespoons sugar
1 stick
(1/2 cup) unsalted butter, at room temperature
1 teaspoon vanilla / lemon extract
2 large eggs

1/3 cup flour
salt

Preparation
In a small bowl put the
grapes into cognac.

Mix the butter and sugar together until fluffy, then add extract, eggs - one by one, and finally add the two flours, salt and mix gently until combined.
Extract the
grapes from the cognac.
Divide batter among gratin dishes and press grapes lightly into batter.




















Bake in dishes on a baking sheet until cake is firm and pale golden with slightly darker edges, about 20 minutes at 400 F.
