Gratinated Fennel














One of my daughters' favorite recipes.

Ingredients (for 2 servings)
1 fennel
2 slices of lemon
1 small onion, chopped
1 clove garlic, minced
2 tomatoes, diced
2 tablespoons cream cheese (like Philadelphia)
10 basil leaves, finely chopped
1 teaspoon olive oil
mozzarella, shredded
Salt and pepper
olives (optional)

Preparation
Wash the fennel and remove its green outer leaves, then cut in half, remove the core, and cut it into pieces.
Boil them together with the lemon slices and salt for eight minutes.















Separately, in a pan, sear the onion and garlic with oil until they golden,















add the tomatoes,















then add the fennel, creamy cheese and basil, and let them over heat until the cheese melts.















Season it with salt and pepper, then put it in little casseroles (Pyrex, cocotte ...).
Sprinkle the shredded mozzarella on top of each one,















Decorate with olives,













then put them in the preheated oven at 360F/180C, and leave until golden brown on top.
