Multivitamin Stew

I called this stew "multivitamin" because it contains many vegetables that are beneficial to your health. Vegetables were chosen to complement both their health benefits and flavor.

The stew is very tasty and successful to the whole family :)


7 potatoes

8 small tomatoes

8 green onions / 1 dry onion
8 to 10 small mushrooms (I used shiitake)

2 carrots
a handful of beans  
a handful of green peas / green soybeans
3 small zucchini

1 green
1 beetroot (I also added the leaves)

3 stems / stalks of celery

4 tablespoons olive oil

1 1/2 to 2 tablespoons cilantro (necessary)

1/2 - 1
tablespoons black pepper
1 to 2 tablespoons salt


Clean and wash all vegetables , then chop them in the shape and size desired.

I forgot to include the carrots in the picture :)

In a pan fry onions in the 4 tablespoons of oil, then add the carrots, the mushrooms and the tomatoes, 

stirring a little bit after each vegetable added, and continue adding the rest of vegetables too, one after the other.

Then, add warm water to cover them, add salt, black pepper and coriander (gives very good taste to the food).

Then cook until all vegetables are cooked and the water level drops.
