Ham and Cheese Pretzel Bites

Eat them right away, they disappear fast :).

700 g flour
300 ml warm water
113 g butter at room temperature
2 1/2 teaspoons dry yeast
2 1/2 teaspoons salt
1 teaspoon brown sugar / honey

150 g ham (I used turkey ham)
cheese (your choice)
4 tablespoons baking soda
3 l water
sea ​​salt / poppy / sesame

Dissolve the yeast in warm water together with the sugar and the salt, then add the butter, flour, and knead the dough elastic and not sticky. Allow dough to rise until double in size.
After dough has risen, divide into 4 pieces,

make each into a roll,

flatten them,

then spread each in a rectangular sheet.

Put the pieces of ham and cheese on top of each of them,

then make it into a roll pushing down on it as you do so,

and then cut each into small squares of 3 cm, no larger than that.

Bring the water to boil, then add the 4 tablespoons of baking soda (not baking ammonia!) And then sink each square in it one by one, for 20-30 seconds.

Remove with a paddle on a baking sheet covered with parchment paper, then brush with egg yolk mixed with a little water, drizzled with sea salt / poppy / sesame seeds and bake for 15-20 minutes at 425F/220C .
