Butternut squash and gorgonzola - a tasty combination.
Ingredients
530 g squash (just pulp, without seeds and skin)
70 g Gorgonzola
A small pear
50 g butter
1 tablespoon sesame oil (I didn't put)
1 small onion, cut into large pieces
700 ml chicken broth / hot water
50 ml sour cream
parsley
salt
black pepper
nutmeg
Preparation
Peel the squash and the pear and cut them into cubes.
Cook the onion in butter and sesame oil,
add the chicken broth / water, then the squash, the pear and the parsley, salt and black pepper to taste
and let it boil for 25-30 minutes (squash should become soft).
Afterwards puree everything, then add the gorgonzola,
and stir over low heat until it melts, then remove from heat, add the sour cream and add more spices if necessary.
Soup is served with toast / croutons, rubbed with gorgonzola if you want.
